Ginger Scallion Noodles with Spicy Seaweed Sprinkles

Ingredients
- 8oz dried noodle (ramen, lo mein, etc)
- 2-1/2 to 3 cups scallions, thinly sliced greens and whites (2 bunches)
- 1/2 finely minced fresh ginger
- 1/4 cup vegetable or other neutral oil
- 1-1/2 tsp light soy sauce
- 3/4 tsp sherry vinegar
- 3/4 tsp salt
- Ocean's Balance Spicy Seaweed Sprinkles
Directions
- Mix together everything except the noodles in a bowl. Let sit while you cook the noodles. Add more ginger or salt, to taste (I love mine with lots of ginger!)
- Bring 2 quarts of generously salted water to boil. Add noodles and cook until desired tenderness (err on the side of chewy). Drain.
- Pour ginger scallion mixture over the noodles and combine well, using tongs, being sure to gently coat each noodle with the sauce.
- Top with Ocean’s Balance Spicy Sprinkles.
