Legend has it that this recipe was what Jennifer Aniston ate every single day on the set of "Friends"; once you try it you will see why! This salad is fresh, colorful, crunchy, super simple, nutritious and delicious! Meal prep this salad for easy lunches or eat it as the main course for dinner, you can't go wrong!
1 cup WL Dulse, Chopped
1 cup Quinoa
15oz can of Chickpeas, drained
1 cup roasted Pistachios, chopped
1 ¼ cup Cucumbers, diced
½ cup Red Onion, chopped
¾ cup Mint, chopped
¾ cup Parsley, chopped
¾ cup Feta
2 Lemons, juiced
¼ cup Olive Oil
Cook quinoa according to package directions and fluff with fork when complete. Pour quinoa into large bowl.
Add in rinsed and drained chickpeas, pistachios, cucumbers, onion, mint, parsley, feta, lemon juice, olive oil. Mix and enjoy!
