The Patagonian one-pot breakfast is a great way to put on a healthy show for breakfast that’s flavorful, balanced and helps clean out the fridge! It’s perfect with all kinds of vegetables, leftover fish or meats, and even olives and capers. In the recipe below we use pre-cooked salmon, but smoked salmon works, too. Garnishing it with our Organic Dulse Flakes really puts it over the top!
Heat an oven-safe skillet (such as a cast iron) over medium-high heat on the stovetop, and begin to sauté onions and garlic until nicely browned.
Sauté spinach and/or arugula. Add tomatoes and olives (and any other loose vegetables you may have) and toss them on top of the bed of sautéed greens.
Crack 3-6 eggs on top of the bed of greens, giving each egg its own space and avoiding broken yolks. Place the pan in the 450°F oven and bake for 4 minutes and 15 seconds for perfectly runny yolks. If you like your eggs a little more firm, cook for a bit longer.
Remove from oven. Add the salmon and olives and capers (if using). Garnish with Ocean’s Balance Dulse Flakes and enjoy!
