Vegan Cesar Salad with Kelp Purée and Roasted Chickpeas

Ingredients
- 1/2 baguette, cut in bite-size pieces
- 2 T Olive Oil
- 1 garlic clove, minced
- 1 (14oz) can chickpeas, drained well and dried (it’s ok if the skins come off)
- a drizzle of olive oil
- salt and pepper
- 1 cup raw cashews, soaked for at least 30 minutes
- 3 large cloves garlic
- 1 tsp. white miso paste
- 3 Tbs. Ocean’s Balance Kelp Purée
- 1/4 cup fresh lemon juice
- 1 tsp. Dijon mustard
- 2 tsp. caper brine
- 3/4 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
- 2/3 cup water (I used the water the cashews soaked in)
- 2 heads romaine lettuce, roughly chopped

Directions
- Preheat the oven to 400°F.
- Whisk together olive oil and minced garlic clove. In a large bowl, toss together baguette pieces and garlic & oil mixture, stirring well to coat the bread. Arrange on cookie sheet.
- Arrange dried chick peas on another cookie sheet. Drizzle olive oil. Roll the chickpeas in the oil to coat. Season with salt & pepper.
- Bake both until chickpeas and crouton are browned and crisp, stirring both halfway through, about 15 minutes the croutons and 25 minutes for the chickpeas.
- While the croutons and chickpeas are baking, make the dressing: add all ingredients in a food processor and blend for 3-4 minutes, until completely smooth. (This makes a lot of dressing
- you may not want to use it all. It can be stored in the fridge for tomorrow’s salad!)
- In a large salad bowl, toss the lettuce, 1/2 the croutons and chickpeas with as much dressing as desired, making sure everything is coated well. Top with remaining chickpeas , croutons and a grind or two of black pepper. Serve immediately.

Delicious on its own or as an accompaniment to grilled vegan proteins. ; A glass of crisp white wine also goes well!
